Learn to make rustic and traditional steamed and sourdough breads, homemade savory pickles, fresh dairy-free pasta, and a vegetarian meat substitute called seitan.

Home Processing II - Soy Products

This, the second our our three Home Processing courses, explores the many ways that soy can be used to produce a variety of delicious products. Fermentation has traditionally been at the forefront of getting the most from soy. Fermentation makes soy more digestible and brings a deeper aspect to this complete protein. From the many digestive and overall detoxifying qualities of miso, to the deeply satisfying textures of concentrated soy products like tofu and tempeh, and the unique digestive strengthening qualities of natto, these basic soy products provide the basis for an important piece of any plant-based diet.

Home Processing III - Grain Products
