Johsen Shoyu was selected from over 2000 entries to receive the Japanese Ministry of Agriculture's first place for "the highest quality soy sauce in Japan." Johsen Shoyu always starts with the choicest organic whole soybeans and organic whole wheat, deep well water, and sea salt. Slow natural aging gradually mellows the sauce over more than 18 months, developing a rich, complex character. Johsen Shoyu contains no added alcohol or other preservatives.
