Faculty members are drawn from the Austin community and around the world. Faculty are graduates from a variety of schools including The Natural Epicurean Academy of Culinary Arts, The Kushi Institute, The Vega Study Center and traditional culinary programs. All have extensive macrobiotic training. Throughout the year, guest teachers and chefs are invited to give specialty classes in their areas of expertise. Teachers receive up-to-date information and ongoing education through annual workshops and conferences held throughout the United States.
Dawn Pallavi
Director of The Natural Epicurean and Instructor
Dawn Pallavi is an experienced instructor and chef
of natural foods who specializes in incorporating health and wellness
into the culinary arts. She studies and teaches not only how to make natural foods look and
taste great, but how those foods affect our lives, our moods, and our
bodies. Her mission is to compassionately educate and empower people to
make healthy food and lifestyle choices that will enhance and bring
balance to their lives. Dawn lives in Austin with her daughter Joy.
Warren Kramer
Macrobiotic Health Counselor and Teacher
Warren Kramer is an internationally recognized macrobiotic counselor, lecturer, and
cooking teacher. He is a faculty member of the Kushi Institute in
Becket, MA, the New England School of Acupuncture in
Watertown, MA, the Strengthening Health Institute in
Philadelphia, PA, and a member of the Macrobiotic Educators
Association (M.E.A.). Warren teaches the macrobiotic approach to health
and wellness including principles of food selection and preparation,
exercise, work, and personal relationships.
Marko Ellinger
Instructor
Instructor Chef Marko Ellinger has been passionate about
being on the frontier of the latest breakthroughs in the culinary arts
for over twenty-five years and currently resides in Austin, Texas. As an
education specialist who comes from a family of teachers, Marko has
provided leadership in many of Austin's finest restaurants and is
frequently contracted by Austin's best caterers for his combined talents
of food design and charismatic cooking in public view.
